What to cook tonight: easy weeknight dinners

Short answer: pick a dinner you can cook in 25 minutes with one pan, using something you already have, and limit yourself to two options before choosing. It is easier than it sounds: in the Chef Drago recipe catalogue, about 3 in 10 main dishes are easy and ready in 25 minutes or less.

The hard part of a weeknight dinner is rarely the cooking. It is the ten minutes spent staring into the fridge, scrolling recipes and asking “what do you want?” to someone who answers “I don’t mind”. Here is a method that removes that step.

The three-question method

Answer these in order, out loud if it helps. Each one cuts the list of possible dinners in half.

  1. How much time do I really have? Be honest: 15, 25 or 40 minutes. On a normal weeknight, 25 is the sweet spot.
  2. What has to be used up? One ingredient is enough: half a bag of spinach, two eggs, leftover rice.
  3. What do I feel like? Comfort, fresh, spicy, or “just food”. One word.

Now pick two recipes that fit, not ten. Then choose between those two. Comparing two dishes takes seconds; comparing twenty takes the whole evening.

10 easy dinners ready in 25 minutes or less

All of these are rated easy in Chef Drago, and most only need a frying pan or a saucepan. Times are total times as shown in the app.

Dinner Time Style
Shrimp scampi with zucchini noodles 10 min Italian, light
Skillet ham and cheese toasties 10 min French, comfort
Couscous salad with tomato and feta 12 min Mediterranean, fresh
Mushroom and cheddar quesadillas 15 min Mexican, cheesy
Shrimp and pepper noodle stir-fry 15 min Chinese, quick
Quick vegetable and chickpea couscous 15 min Middle Eastern, vegetarian
Quick peanut butter noodles with carrot 15 min Thai-inspired, vegetarian
Creamy egg and cheddar ramen 15 min Japanese-inspired, comfort
Quick coconut curry with potatoes and spinach 17 min Indian-inspired, vegetarian
Quick coconut chicken curry 20 min Indian-inspired, cosy

Five habits that make weeknight cooking faster

  • Start the water or the rice first. Whatever takes longest goes on the heat before you chop anything.
  • Chop everything before you turn on the pan. Two minutes of preparation saves five minutes of panic.
  • Use one pan when you can. Fewer dishes is a real reason to cook again tomorrow.
  • Keep a few shortcuts: frozen vegetables, a jar of curry paste, canned beans, pre-cooked rice.
  • Season at the end. Taste, then add salt, lemon or chili. It fixes most “something is missing” moments.

When you still can’t decide

If you are stuck between options, stop adding more. Take the two you like most and ask one question: which one would I be annoyed not to eat? That one wins.

That is exactly how Chef Drago works: you swipe through easy recipes, and as soon as two are on your shortlist they face off in a duel. You tap the one you would rather eat, and the app walks you through it step by step. See how it works, or try the deck on the home page.
